Simple, waist-line friendly, Soup

I'm not much for pre-packaged meals. But I am all about easy meals! Especially being a busy mom!

One meal that has become a staple this winter has been veggie noodle soup.

Here's how it goes...

Pour several cans of chicken broth into the crock pot.
Toss is a bag of frozen mixed veggies likes these...

and cook on low!

About 30 min  before you want to eat...turn the heat up high and toss in a bag of frozen egg noodles like these...


Keep on high for 30 minutes and then you're done!

Fast, easy, kid approved, and waist-line friendly!

Healthy...and kid approved....Vegetarian Tacos!


In my mission to create a 80% vegetarian diet for myself, I created a great little taco that even my kids will eat! 

You will need pre-washed red quinoa, packet of taco seasoning, corn taco shells, refried black beans, and your favorite taco toppings! On my list is  sour cream, salsa, shredded cheese, black olives, shredded lettuce!

Prepare quinoa as directed adding half the packet of taco seasoning to the water. Cook as directed. Heat up refried black beans and grab your favorite toppings. 

Place beans in bottom of taco shell followed by quinoa. Top the rest with your favorite toppings. 

Super easy....Super Yummy...Kid Approved!

Healthy At Home Frozen Latte

Take your leftover coffee from the morning.
Pour it into a blender.
Add a big scoop of Plain Greek Yogurt
Add a big scoop of crushed ice
Add a big splash of Unsweetened Original Almond Milk
Add a couple tablespoons of Hershey's syrup

Blend.
